1 1/2 lbs lean ground beef
1 Tbsp extra virgin olive oil
1 large onion, chopped
1 Tbsp minced garlic, from jar
1 med. cabbage, chopped
2 cans (14.5 oz. each) diced tomatoes
1 can (8 oz.) tomato sauce
1 c. water
1 c. beef broth
1/2 tsp ground black pepper
3/4 tsp sea salt
2 tsp sugar
In a large skillet, heat olive oil over medium heat. Add the ground beef and onion and cook, stirring, until ground beef is no longer pink and onion is tender.
Add the garlic and continue cooking for 1 minute.
Add the chopped cabbage, beef broth, tomatoes, tomato sauce, sugar, pepper, and salt. Bring to a boil. Cover and simmer for 25 to 35 minutes, or until cabbage is tender.
Yield: Serves 6 to 8.
